Potatoes go very well with eggs. Here is a tasty potato egg kurma that you can mix with rice for lunch or a side dish for rotis or chappathi for dinner. This is an ideal dish for a weekend menu. Ground coconut and green chilly and coriander leaves with a flavour of ginger garlic paste adds to the taste of this gravy.
Ingredients :
- Boiled eggs-4
- Potato-1 medium size
- Scrapped coconut-half cup
- Green chilly-6
- Coriander leaves-half cup
- Ginger garlic paste-1 tbsp
- Onion-1 large
- Bay leaf,cinnamon,elaichi,cardamom- 1 each
- Curry leaves-a few
- Salt
- Oil-2 tbsp
- Garam masala-1 tsp (optional)
- Red chilly powder-1 tsp
Preparation :
- In a mixer jar add the coconut,green chilly,coriander leaves and grind it to a smooth paste adding little water.
- Heat oil in a pan and add the whole garam spices to it.
- Add the thinly sliced onions and saute well. Add the ginger Garlicpaste and saute until raw smell leaves.
- Add the ground paste and saute again.
- Add the cubed potatoes and curry leaves to it mix well. Add salt and red chilly powder and mix again.
- Pour needed water and add the garam masala and mix well. cover with a lid.
- When potatoes are cooked add the boiled and cut eggs to it and simmer for few minutes and switch off.
- Serve it with rice or roti.
