Egg roast

Here is a very simple egg roast recipe that is a good side dish for pulao or ghee rice. If you don't like eating boiled egg,then try this ,you will surely love it.


I used sambar powder for the masala but you can also use red chilly powder, coriander powder and turmeric powder separately.
Ingredients:

  • Boiled eggs-3
  • Green chilly-1
  • Curry leaves- few
  • Oil-1tbsp
  • Salt-as needed
  • Sambar powde-2 tsp

Instructions:

  • Peel the shell of boiled eggs and cut into slices.
  • In a pan,heat oil and add chilly and curry leaves.
  • Add the sambar powder and salt a d simmer and mix quickly.
  • Add the egg slices and gently roast it on both sides for few seconds.
  • Switch off  the stove a d transfer contents to a serving bowl. 
  • Serve with pulao or ghee rice.


Masala omlet

A spicy twist to the regular omlet is something that you got to try . This can be had as a breakfast or snack or side dish for rice. Adding chilly powder and garam masala along with onions,tomato and green chilly gives it an excellent taste. Can be had with ketchup for breakfast. Here is the recipe for the spicy and tasty masala omlet.
Ingredients:
Eggs-2
Onion-1
Tomato-1
Green chilly-1
Coriander leaves - few 
Red chilly powder-1/2 tsp
Garam masala-1 pinch
Coriander powder-1 pinch
Pepper-1 tsp
Salt-as needed
Oil-1 tsp
Preparation : 

Break open two eggs in a bowl. Add salt and pepper to it mix well.
Add the chilly powder,coriander powder, garam masala and beat well.
Add the onion,tomato, green chilly and coriander leaves and beat thoroughly.
Heat a tawa and pour the egg mixture on it. Cover with a lid and cook for a minute. 
Flip to the other side and cook for few seconds.
Serve it with tomato ketchup.


Egg Kuzhambu / Muttai Kuzhambu

This is an easy egg kuzhambu recipe that comes handy when you run out of veggies at home. Coconut and spices are ground together to give an exotic flavour to the gravy. This ground masala is what makes it different from the normal kuzhambu recipe. Try this and you will surely love it.

Ingredients:
Boiled eggs- 3 or 4
Shallots-10 nos
Tamarind extract -1 cup
Turmeric powder-1tsp
Coriander powder-1 tbsp
Red chilly powder-1tbsp
Salt
Note:you can also use sambar powder.
To grind:
Shallots-2
Garlic pod-10
Red chilly-2
Fennel seeds-1tsp
Coconut-1 cup,Shredded
For seasoning:
Oil-1 tbsp
Mustard seeds
Jeera seeds
Pepper corns
Curry leaves
Method:

  • In a mixer jar add the ingredients under to grind section and grind it.
  • In a pan add oil and all the ingredients for seasoning. 
  • Add the shallots and saute for few seconds. 
  • Add the ground masala and saute for few seconds.
  • Add the tamarind extract,turmeric powder, red chilly powder coriander powder and salt stir it.
  • Let it boil for few minutes.
  • Add the boiled eggs and cook for few more minutes until gravy thickens.
  • Switch off flame and serve hot with rice and papad.








Spicy egg gravy

This is an onion and tomato based egg gravy with south Indian spices. It tastes good with rotis , chappathis or any indian flat bread. grinding the onions and tomatoes to prepare the gravy will give a thicker consistency and also a good taste. Instead of preparing a gravy you can also make it thicker by not adding water and cooking for a longer time.this can be stuffed inside sandwiches or rolls.
Ingredients:
  • Hard boiled eggs-4
  • Onions-1 large
  • tomatoes-2 medium
  • Coriander leaves-few
  • Curry leaves-1 spring
  • green chillies-4
  • red chilly powder-1 tsp
  • turmeric powder-1 tsp
  • Coriander powder-1 tsp
  • cumin powder-1 tsp
  • salt
  • oil-1 tbsp
  • mustard seeds-1 tsp

Preparation:
  1. Heat oil in a pan and saute the onions and tomatoes. add the spice powders to it.
  2. Switch off flame and cool it down.
  3. Put this in a mixer jar and grind to a paste.
  4. Again add oil to the pan and splutter the mustard seeds. add the curry leaves. pour the puree into it . add salt and saute for few seconds.
  5. When the oil starts seperating add water and mix well.
  6. allow it to boil for few seconds.
  7. Cut into halves and add the boiled eggs.
  8. Simmer and cover with a lid for one minute. Switch off the stove and transfer it to serving bowl.




Potato and egg gravy/ Aloo egg kurma

Potatoes go very well with eggs. Here is a tasty potato egg kurma that you can mix with rice for lunch or a side dish for rotis or chappathi for dinner. This is an ideal dish for a weekend menu. Ground coconut and green chilly and coriander leaves  with a flavour of ginger garlic paste adds to the taste of this gravy. 

Ingredients :
  • Boiled eggs-4
  • Potato-1 medium size
  • Scrapped coconut-half cup
  • Green chilly-6
  • Coriander leaves-half cup
  • Ginger garlic paste-1 tbsp
  • Onion-1 large
  • Bay leaf,cinnamon,elaichi,cardamom- 1 each
  • Curry leaves-a few
  • Salt
  • Oil-2 tbsp
  • Garam masala-1 tsp (optional)
  • Red chilly powder-1 tsp

Preparation : 
  1. In a mixer jar add the coconut,green chilly,coriander leaves and grind it to a smooth paste adding little water. 
  2. Heat oil in a pan and add the whole garam spices to it.
  3. Add the thinly sliced onions and saute well. Add the ginger Garlicpaste and saute until raw smell leaves.
  4. Add the ground paste and saute again.
  5. Add the cubed potatoes and curry leaves to it mix well. Add salt and red chilly powder and mix again.
  6. Pour needed water and add the garam masala and mix well. cover with a lid. 
  7. When potatoes are cooked add the boiled and cut eggs to it and simmer for few minutes and switch off.
  8. Serve it with rice or roti.





Egg mayo sandwich

Sandwiches are an ideal weekend breakfast. Here is a tasty egg and mayo sandwich recipe with crunchy bell peppers and fresh mint leaves. This filling can also be rolled in chappathi or roti to make a delicious egg wrap. So try this juicy and crunchy sandwich and enjoy!!!
Ingredients:
  • Hard boiled eggs-4
  • Capsicum-1
  • Mint leaves - a few
  • Pepper powder
  • Toasted Bread slices or buns
Preparation :
  1. Mix all the ingredients in a bowl.
  2. Stuff inside the bread slices.
  3. Tasty sandwich is ready!



Egg roast

Egg roast is a very simple dish that can be served s a side dish for any rice variety. 
It is prepared using boiled eggs and spice powders. Pack this in your kid's lunch box as a side dish for  sambar or Rasam rice or even veg pulao or tomato rice and they will surely like it.

Ingredients : 
  • Hard boiled eggs- 4
  • Turmeric powder- a pinch
  • Red chilly powder-1 tsp
  • Pepper powder-1tsp
  • Jeera powder-1tsp
  • Salt

Preparation :
  1. Cut the hard boiled eggs into halves.
  2. Heat oil in a pan 
  3. Add the eggs to it and sprinkle all the spice powders and salt on it and gently mix it evenly.
  4. Cook for few minutes until the raw smell of the spice leaves.
  5. Switch off flame and immediately transfer the dish to another bowl.


Mushroom Omlet

Mushrooms and eggs are a great combo. Mushrooms are not just tasty but are also loaded with a lot of goodness. Mushroom omlet has a great nutritional value and can be served as breakfast or snack to kids. I have not added cheese but you can add cheese to it for a more rich taste. 
Ingredients : 
  • Eggs-2
  • Button Mushroom- a few
  • Pepper powder-half tsp
  • Salt
  • Oil-1 tsp
  • Tomatoes (optional) - 1 small
  • Coriander leaves (optional)-a few
  • Grated cheese (optional)

Preparation :
Method 1:
  1. Break open the eggs in a bowl
  2. Add all the ingredients (except cheese) and beat well.
  3. Pour the eggs in a tawa and (sprinkle grated cheese if your using it) cook both sides.
  4. Serve it hot.

Method 2:
  1. Break open the eggs in a bowl and add pepper powder and salt to it.beat it well.
  2. Heat a pan on the stove and spay little oil.
  3. Add the mushroom,coriander leaves,tomatoes and stir fry for few seconds.
  4. Pour the eggs on this and add little oil to the corners.
  5. Grate the cheese on top and cook both sides for few seconds.
  6. Serve hot.
