This is an easy egg kuzhambu recipe that comes handy when you run out of veggies at home. Coconut and spices are ground together to give an exotic flavour to the gravy. This ground masala is what makes it different from the normal kuzhambu recipe. Try this and you will surely love it.
Ingredients:
Boiled eggs- 3 or 4
Shallots-10 nos
Tamarind extract -1 cup
Turmeric powder-1tsp
Coriander powder-1 tbsp
Red chilly powder-1tbsp
Salt
Note:you can also use sambar powder.
To grind:
Shallots-2
Garlic pod-10
Red chilly-2
Fennel seeds-1tsp
Coconut-1 cup,Shredded
For seasoning:
Oil-1 tbsp
Mustard seeds
Jeera seeds
Pepper corns
Curry leaves
Method:- In a mixer jar add the ingredients under to grind section and grind it.
- In a pan add oil and all the ingredients for seasoning.
- Add the shallots and saute for few seconds.
- Add the ground masala and saute for few seconds.
- Add the tamarind extract,turmeric powder, red chilly powder coriander powder and salt stir it.
- Let it boil for few minutes.
- Add the boiled eggs and cook for few more minutes until gravy thickens.
- Switch off flame and serve hot with rice and papad.
