Coconut rice

I was waiting to make a post on coconut rice recipe for a long time but everytime I make coconut rice I don't find time to click pics. So today made this yummy coconut rice and managed to click it.
Using freshly grated coconut gives the rice an exotic flavour. The grains and nuts added gives a crunchy feel. I used ghee to make this but tastes good if made using coconut oil. Spicy potato curry or plantain roast will be a best combo for this coconut rice. Some people add crushed papad to this before serving.
Ingredients : 
  • Cooked white rice-1 cup
  • Grated coconut-1/4 cup
  • Green chilly-1
  • Ginger-1 inch
  • Curry leaves-few
  • Coriander leaves-few 
  • Ghee-1/2 tbsp

To temper:
  • Mustard-1tsp
  • Urad-1tsp
  • Channa dal-1 tsp
  • Cumin-1 tsp
  • Roasted peanuts-1 tbsp
  • Cashews-few
  • Hinge-a huge pinch
  • Red chilly-1

Preparation : 
  • Heat oil or ghee in a pan. Add all the Ingredients under the to temper section.
  • Then add the green chilly,ginger, coriander leaves and curry leaves.
  • Simmer the flame and add the grated coconut to it with needed salt.
  • Mix well and switch off flame immediately. 
  • Add cooked rice to this and mix thoroughly. 
  • Serve it with potato curry or plantain fry.

Step by step instructions :

Sambar rice /sambar sadham

Sambar rice is different from Bise bele bath. There is no need to grind a seperate masala or use coconut in this rice,just the sambar powder is enough. I have shown how to make mixed vegetable sambar in another post and this is just an addition aĆ ato that.

Step by step instructions :
1.Cut the veggies into bigger chunks and boil it with a pinch of turmeric powder.

2.Soak tamarind in warm water and extract the pulp


3.In a pan add the ghee and heat. Add mustard seeds and let it splutter.Add the methi and cumin seeds. Add curry leaves and green chilly.


4.Add thinly sliced onion and saute


5.Add the pressure cooked toor Dal.


6.Add cooked veggies and tamarind pulp.


7.Add needed salt and sambar powder. Mix well. Add enough water


8.Bring it to a boil.


9.Add coriander powder and coriander leaves and mix.


 10.Switch off

11. Add this sambar to rice and add a spoon of ghee.







12. Mix well when it is still hot, so that the rice gets mushy.







Ingredients : 
  • Mixed vegetables-1 cup
  • Toor dal-1 cup
  • Onion- 11qaaaq
  • Green chilly-1
  • Tamarimd-small amla size
  • Sambar powder- 2 tbsp
  • Salt
  • Oil/ghee - 3 tsp
  • Mustard seeda-1tsp
  • Methi seeds-1/2 tsp
  • Cumin-1 tsp
  • Turmeric powder- 1 tsp
  • Coriander powder -1 tsp
  • Coriander leaves -few
  • Cooked rice-1 cup
  • Ghee-1 tbsp

Preparation :
  • Pressure cook the toor dal until mushy.
  • Soak the tamarind in warm water and extract the pulp.
  • In a pan add the ghee and heat. Add mustard seeds and let it splutter.

  • Switch off and mix with cooked rice,adding a spoon of ghee.

Vegetable pulao

A mildly flavoured vegetable rice cooked in coconut milk. This pulao is a hit in our family. This is very simple to prepare and goes well with some spicy side dish like potato curry or egg curry or plantain roast.
Green chilly is the only source to add spiciness to the rice, so use it according to your need. I hav used 2 slit green chillies that does not make it much spicy. You can add upto 5 or 6 slit green chilly for a spicy pulao.


 Step by step instructions : 
1. Wash and soak basmati rice for 20 minutes.
In a pan heat the ghee and add the whole garam spices.

2. Add onion and green chilly and saute for a minute. Add the ginger garlic paste and saute until raw smell leaves.

2.Add the veggies and saute few seconds.

2. Add salt and mix.

3.Pour in the coconut milk and needed water.

4.Add the basmati rice.Cover with a lid and cook until done or pressure cook for 3 to 4 whistles.


5.Pulao is now ready!

  • Water-3 cups
  • Coconut milk-1 cup
  • Mixed veggies- 1 cup (carrots, cabbage, cauliflower,green peas)
  • Onion-1
  • Green chilly-2 (add more for spicy pulao)
  • Gingrich garlic paste-1 tbsp
  • One each of
  • Cinnamon
  • Cardamom
  • Bay leaf
  • Clove
  • Ghee-2 tbsp

Preparation :

Pudina peas pulao

Ading greens  to your diet is essential and it need not always be the usual dishes that we prepare at home. For a change, try this simple pulao recipe using pudina and green peas that is tasty and nutritious. It is cooked using coconut milk and whole garam spices with green chilly and ginger garlic paste.  It tastes good when had with a spicy potato curry,raitha and papad .
Ingredients :
  • Basmati rice-2 cups
  • Pudina-1 cup
  • Peas 1/2 cup
  • Green chilly -6,slit lengthwise
  • Ginger garlic paste-1 tbsp
  • Ghee-2 tbsp
  • Coconut milk-1 cup
  • Water-3 cups
  • One each of:
  • Cinnamon 
  • Cardamom 
  • Clove
  • Bay leaf

Preparation:
  • Wash as soak basmati rice for 20 minutes. Drain water and keep aside. 
  • Heat ghee in a pan. Add the cinnamon, cardamom, bay leaf, clove.
  • Add the chopped onions and green chilly and saute for a minute.
  • Add the ginger garlic paste and saute until raw smell leaves. 
  • Add the pudina and peas and saute few seconds.
  • Now add the basmati rice and mix gently.
  • Transfer the contents to a pressure cooker or electric rice cooker and add water and coconut milk.
  • Add needed salt and mix gently. 
  • Cover and cook.
  • Once done,open the cooker and mix gently,taking care not to break or mash the rice.


Vegetable fried rice

Fried rice is one best way to load the veggies in kids meal. It is very simple and apt for busy weekday morning cooking schedule. This does not need a side dish and can be had with ketchup or chips. I have used green peas,carrot and potato in this recipe, you can also add broccoli, cauliflower,mushrooms,beans etc of your choice. Usually spring onion is used in fried rice but I have used onions instead. If you are using spring onions then chop and add them in the end. So,here is the recipe for this quick and tasty fried rice.
Ingredients:
  • Cooked basmati rice-1 cup
  • Mixed vegetables-1/4 cup
  • Pepper powder-2tsp
  • Soy sauce-1 tsp
  • Salt
  • Olive oil-1tbsp

Preparation:
  • Add olive oil to a pan and heat it. 
  • Add chopped garlic and fry till it turns brown.
  • Add onions and saute. 
  • Add the vegetables and stir fry for few seconds.
  • Add pepper powder,soy sauce and salt and mix well.
  • Ad the cooked rice and mix well. Stir fry for few seconds.
  • Serve hot.
