This is an onion and tomato based egg gravy with south Indian spices. It tastes good with rotis , chappathis or any indian flat bread. grinding the onions and tomatoes to prepare the gravy will give a thicker consistency and also a good taste. Instead of preparing a gravy you can also make it thicker by not adding water and cooking for a longer time.this can be stuffed inside sandwiches or rolls.
Ingredients:
- Hard boiled eggs-4
- Onions-1 large
- tomatoes-2 medium
- Coriander leaves-few
- Curry leaves-1 spring
- green chillies-4
- red chilly powder-1 tsp
- turmeric powder-1 tsp
- Coriander powder-1 tsp
- cumin powder-1 tsp
- salt
- oil-1 tbsp
- mustard seeds-1 tsp
Preparation:
- Heat oil in a pan and saute the onions and tomatoes. add the spice powders to it.
- Switch off flame and cool it down.
- Put this in a mixer jar and grind to a paste.
- Again add oil to the pan and splutter the mustard seeds. add the curry leaves. pour the puree into it . add salt and saute for few seconds.
- When the oil starts seperating add water and mix well.
- allow it to boil for few seconds.
- Cut into halves and add the boiled eggs.
- Simmer and cover with a lid for one minute. Switch off the stove and transfer it to serving bowl.
