Vegetable Noodles

Instead of buying the instant noodles from the store it is better to buy plain noodles and add our own home made masala to  it. This not only tastes good but also a healthier choice. Load your dish with as much veggies as possible and make it nutritious. I have used carrots, green peas,  sweet corn, potato, mushrooms,  cauliflower and onions. This is a typical indian spicy masala noodles. The same recipe can be followed to prepare egg noodles. Aling with the veggies add scrambled eggs. You can add your own favourite masala to this noodles. So ,here is the recipe for mouth watering  vegetable noodles.

Ingredients : 
  • Plain noodles- 1 cup
  • Onion-1 large
  • Mixed vegetables- 1 cup
  • Ginger garlic paste-1 tbsp
  • Red chilly powder-2 tsp
  • Pepper powder-2 tsp
  • Garam masala powder -1 tsp
  • Tomato sauce or ketchup-1 tbsp
  • Soya sauce-2 tsp
  • Salt


Preparation :
  1. Take the instant noodles in a pan and add water just enough to cover it.
  2. Cook the noodles in medium high flame with needed salt.
  3. Once cooked remove from the stove and drain excess water.
  4. Immediately run it under cold water to avoid it from getting sticky or mushy.
  5. Drain well and keep aside.
  6. In a pan add olive oil and heat.
  7. Add the onions and saute well.
  8. Add the ginger garlic paste and saute. 
  9. Add the spice powders and little salt.
  10. Add all the veggies and mix well. Cover with a lid until the vegetables are well cooked. 
  11. Finally add the noodles, tomato sauce and soy sauce and mix well. 
  12. When the noodles gets thoroughly mixed with the veggies and masala switch off flame. Serve hot.
