Instant Mango pickle

Lunch will not be satisfying if we don't have a spoon of pickle. Here is an instant mango pickle recipe that you can prepare in a jiffy. When it's mango season just grab a heap of raw mangoes and make this delicious spicy pickle and store it in the fridge. 
Instead of store bought pickles that have preservatives in them,you can go for this easy option of making pickles at home.
It is always good to use sesame oil while making pickles as it gives good taste and flavour and helps to increase shelf life. 


The most important point to be noted is that there should not be a drop of water in any of the utensils that your using including knife,pan and ladle. Wash the mangoes and then wipe them with a clean cloth before cutting them. If there is even a drop of water then it will decrease the shelf life of the pickle. Everytime you take the pickle ise a dry spoon and take it out.


Ingredients:
Raw mangoes -2,medium size
Gingely/sesame oil- 4 tbsp
Red chilly powder-1 tbsp
Methi/fenugreek powder-2 tsp
Mustard-1tsp
Salt-as needed

Preparation:
  • Cut the mangoes into small chunks.
  • Heat 2 tbsp of oil in a pan and as the mustard seeds and let it splutter.
  • Add the chopped mangoes,red chilly powder, fenugreek powder and salt and saute until the mango turns tender and shrinks a bit in quantity.
  • Add the remaining oil and mix well.
  • Let it cool down. Store it in glass containers.
